ALCHEMY
Alchemy is simple to do but incredibly complex in nature, possibly the most versatile of all item creations due to its focus on altering ingredients into other ingredients. There is usually not a 'final product' that can no longer be improved on.
Standard alchemy procedures include the following. Additionally, practically any Item Creation can be attempted with Alchemy instead, but the final product will generally not be as high quality as if it were done 'properly'. Your Alchemy skill will also apply far less to such attempts than it does to alchemization of ingredients -> ingredients.
These procedures all require alchemistry sets. Monatery value of items is never a factor in how 'valuable' they are, for better or worse.
Transmute
Changes the very nature of a material, transforming it into a different kind of ingredient completely. This is a curious use of alchemy, and the results are hard to predict. But if you want to turn iron into an apple, be my guest. Be warned that Level usually suffers to some degree depending on how far apart the two materials are, and innate traits are still preserved to some degree.
Enhance
Increases the level of one material by giving up something equal to it in value. Unlike 'Compact', mass is not preserved. Innate stats are not changed, but level is.
Amalgamate
Takes all traits of all materials amalgamated and spreads them out evenly over an equal amount of material. Unlike in most cases, this is easier to do with Alchemy than with the 'parent' creation form of the materials combined this way.
Compact
Compacts multiple units of a material into one more powerful one. This can be handy with many forms of material, but be warned that mass is maintained in these transformations. Three Units of iron squished into one will still have the same weight as three. This makes them potent materials, but things created from said materials can rapidly grow very very heavy.
Compact does not effect levels of items, it affects their innate stats.
Copy
Creates a Unit of a known material using equivilant exchange. Other items must be given up equal in value to what you are trying to create.
Augury
Attempt to unlock the secrets of an item creation material through study of its very essence and structure. You must ask a relatively specific question if you wish to get a useful answer. Higher levels of success give you more information.
Unleash Potential
Uses MP to unleash the magical potential of an item creation material. In most cases this will be unneeded, but 'locked' Gems exist in decently high numbers. You never know what powers you might unlock though...
